Cranberry Apple Walnut Salad - A Running Salad Recipe
What exactly is Cranberry Apple Walnut Salad. It's a unique fruit salad that isn’t too sweet or too tart. A delicious dish for any occasion, but especially fantastic for outdoor gatherings. Serve as a side dish for your pasta the day before a race. From – Julie Tiefenthaler Serves – 8-10 people Special Instructions – Prepare Cranberries the day before. Ingredients 1 1/2 cup chopped fresh cranberries (I just chop them in half) 3 tablespoons sugar 2 tablespoons lime juice 2 teaspoons Dijon mustard 1/2 cup olive oil 1/4 cup chopped green onions (They taste good in it, trust me!) 3 large chopped Granny Smith apples 1 cup chopped walnuts (optional) Romaine lettuce leaves Directions Mix cranberries and sugar. Refrigerate overnight. Mix lime juice, Dijon mustard, olive oil, apples, onions, and nuts. Marinate in refrigerator 1-4 hours. (Optional) Just before serving, line plate with lettuce leaves. Pour cranberries in the center of the plate, and surround them with apple mixture. Enjoy!
